|How it's made||
Long standing working relationships with growers enable us to source premium fruit, with the ultimate aim of making excellent quality Australian house wines with true style and character. The grapes are picked at night/dawn to keep them as cool as possible. Grapes were picked earlier than usual for this area to ensure balance and freshness in the final wine. They are gently crushed to maintain the bright, fresh flavors crucial to the clonal tang. Fermentation in temperature controlled stainless steel retains the fresh fruit character of this largely un-oaked wine.
This vibrant Chardonnay exhibits lifted fruit character, bright tangerine fleshiness, textural mouth-feel, a bright palate and a long and foodie finish. The judicious addition of a blob of oaked Chardonnay adds palate weight and texture.
Full-flavored fish such as trout or halibut or chicken in a light creamy sauce.
