Pasión de Bobal, 2015
Barrel-fermented Bobal from high altitude vineyards new Valencia.
|How it's made||
Produced from the oldest, low-yielding Bobal vines on the Fuenteseca estate. Bobal is grown in loam plaines that are rich in red lcay and Miocene conglomerates. It ripens later that other varieties with young vines often used to make light, fruity reds and the older vines are used to produce more structured, alcoholic wines that can be aged to result in more complex style. Fruit yields are controlled in order to keep the natural ecosystem of the environment and organic practices are also employed, harsh chemicals avoided. The wine was fermented in barrel before undergoing malolactic fermentation and 6 months ageing in French oak barriques.
An open, warm and toasty nose with blackberry, raspberry and savory notes. The palate has lots of dark fruit and well-balanced toasty oak along with fine tannins and a generous and appealing finish.
Full-flavored beef or lamb dishes. Or with hard cheeses and charcuterie.
