A beautifully fresh, yet complex Gavi from old vine fruit. The blend is specially selected by Araldica's Gavi winemaker, Carlo Manera.
|How it's made||
Cortese grapes are sourced from selected, mature vineyards in the heart of the Gavi di Gavi zone. They are hand-picked, pressed and undergo temperature controlled fermentation in stainless steel. The wine remains on it's lees for three months before bottling.
Aromas of citrus, fennel and green apple. The palate is broad and structural with more apple flavors, stone fruit, hints of lemon and a refreshing minerality on the long finish.
Drink with pasta in pesto sauce or try with pork chops.
