Herb-crusted roasted chicken with root vegetables: The savory herb crust on the chicken would echo the wine’s herbal aromas, while the roasted root vegetables would add depth and complexity to the pairing.
Aromas of black fruit and delicate violet notes, accompanied by hints of black tea, dark chocolate, and subtle gingerbread spice. On the palate, it offers a pleasingly aromatic experience, showcasing its fruity profile with excellent balance. The finish is both delightful and lingering, leaving a lasting impression. This wine has been aged for 18 months in barrels, with a combination of 60% new French oak and 40% second-year American oak barrels, adding depth and complexity to its character.
The year was marked by considerable instability, characterized by cold and wet conditions. Hailfall in both July and September posed challenges, particularly impacting delicate berries. Additionally, excessive humidity necessitated rigorous vegetation management and treatment protocols. Ripening progressed slower than usual, albeit with rainfall sparingly interrupting a prolonged harvest period under mild temperatures. Meticulous bunch selection, initially in the vineyard and subsequently on a sorting table in the winery, was imperative to eliminate affected portions. This wine is crafted solely from grapes harvested from old vines. The terroir boasts an impressive composition, featuring a stratum of sizable white pebbles covering a loose, sandy subsoil, offering optimal drainage, ample sunlight exposure, and well-positioned roots for nutrient absorption. Wines produced from such soil exhibit finesse and elegance. The vineyard, situated at an elevation of 570 meters, comprises bush vines aged between 50 to 65 years, sharing the same gravel and pebble-laden surface soil composition.
