The process begins with meticulous grape selection at the sorting table, ensuring only the finest grapes are used. Following this, there is a gentle 6-hour skin maceration period. The wine is then split, with half fermenting in concrete tanks and the other half in 225-liter barrels. After fermentation, the wine undergoes 4 months of lees aging with infrequent battonage. For further refinement, the wine is aged for 8 months in concrete tanks and an additional 9 months in French oak barrels. The barrels consist of a blend: one-third new, one-third second-use, and one-third third-use, contributing to the wine’s complexity and depth of flavor.
