|How it's made||
Aged for eight months in a mix of new (45%) and old (55%) French oak barrels from grapes grown in the Knights Valley area of Sonoma. The harvest took place on the 16th September. (515 cases produced)
Vibrant hues of pale yellow fill the glass, complemented by sparkling notes of green. Aromas are fresh and complex, with honey crisp apple, melon, and cantaloupe gliding through a combination of citrus zing and rich toasted oak. Flavors follow with rich tropical fruits, graceful integrated oak and hints of toast and butter. The lingering finish is crisp and elegant.
Cream cheese over smoked salmon…pan-seared scallops with cream sauce would be perfect.
