Filigree Blanc des Blancs Methode Cap Classique, NV
A tiny production of Cap Classique - traditionally produced fizz from the Cape.
|How it's made||
A blend of the excellent 2013 and 2014 vintages, this is 100% Chardonnay grown on the slopes of Simonsberg mountain. Grapes were harvested at 18 deg Brix/Balling. After fermentation in stainless steel, the wine is entirely aged in third fill French oak demi-muids. Firstly, the wine was kept on it's lees in oak casks for 12 months, 75% of the vintage was blended with the newer vintage after fermentation. Then the blended wine was bottled for it's second fermentation and kept on lees for further 12 months. The wine is then riddled and disgorged being aged in the bottle for a year prior to release.
It has a nose of proving sourdough with a find bead on the palate that releases notes of fresh almonds, warm sand and apricot kernel.
