|How it's made||
30% of the wine is made traditionally undergoing controlled fermentation at 81 degrees F for 15 days. 70% undergoes delestage for 5 days. The grapes are picked from bush wines with no irrigation. Delastage and micro-oxygenation to extract color and aroma while toning down the tannins. The tannins are deliberately restrained to provide a smoother, much more elegant drinking. Four months in a selection of French and American oak barrels.
Toasted, deep, intense, ripe fruit aromas. This wine is rich with well integrated oak. Smooth and long finish. It has a dark ruby color with violet hints at the rim, very clean and bright.
Serve with roasted lamb, grilled red meat and vegetables.
